Your steaks look just like ours (I marinated ours in my 'Italian oil' for 4 hrs)!!! Medium rare is the best, IMO!

Your wife's salad look good too. When Mrs Ranch does her's, I'll post a pic & her recipe. She normally does it around Christmas. I know it has broccoli, cranberries, pecans in it... killer taste!

The rolls came out pretty good for my 'first time'... I made 12 of them (& 2 small rounds of bread)... I split 1 with Mrs Ranch for QC purposes & she said "These are going to be dangerous to have in the house". I think she likes them... as there are now 7 left, LOL!!!

Better grill some burgers right now before they're gone...

Going to give my wife a break for cooking tonight... I got a pot of pinto beans going & will do a 2" sirloin steak (short smoke & then finish it over the coals). Maybe a couple of baked potatoes.

That should put a big smile on her face!!!

Tonight we are having chicken legs again, this time with a N'awlins seasoning, with okra gumbo & rice as the side. Probably a salad & for sure some homemade bread. The smoker is on!!!

Sat night I grilled some fish that I had caught a few days ago. We made fish taco's. Yummm

Last night I grilled some bacon/jalapeno wrapped duck that was also shot a few days ago. I also chicken fried some of it. Duck is not my favorite thing to eat, but when you chicken fry it or wrap it in bacon and japs, its actually pretty good. Sorry no pics this time.

I think I'm going to try smoking a turkey for Thanksgiving. Never done it before but it seems pretty straight forward. I will post up pics if it turns out worth a darn. :D

I'm going to try to do a beef roast as it is suppose to get up to 55 degrees on Thanksgiving day.

Got the Turkey soaking in the brine. I will get up at about 3:30 in the morning, make the fire, crack open a beer and hopefully have the turkey on the smoke by 4:30am. Its a smaller turkey (11 pounds), but we are eating around noon so it still has to go on early. My wifes aunt is also bringing a turkey, so there should be plenty. I will post up the results of my first smoked turkey.

Are you planning to place a pan of water underneath it to help keep it moist? I do that with chicken & it really helps keep them juicy.

I've never done a turkey (as we don't particularly care for it), although I've hear others say that the breast has a tendency to dry out even with injections. Just curious...

Yes there will be a pan of water underneath. I've never done a turkey either. This was a last minute decision. Mainly just gives me an excuse to fire up the smoker. ;)

We already had the full Thanksgiving day meal planned out before I decided to smoke a turkey. There will be another turkey as well. So, it wont be a big deal if I screw up the smoked bird... lol.

Good deal! Hope it turns out so good that you family groans with delight!!!

Got my beef roast thawing out so I can do the seasoning tonight before lights out & got the Weber setup for smoking it... all I have to do is light it up tomorrow. Made some bread dough & put it in the refrigerator so we'll have hot bread for tomorrow too. Mrs Ranch is planning on doing her broccoli/cranberry/pecan salad (it's awesome) & another pumpkin pie for dessert!!!

It's getting there... Wife has the broccoli salad in the frig & her pie is done, The meat spent 2 hrs on the smoker & is finishing up in the oven now, along with the potatoes, carrots, celery, etc.

Well, we ate off that hunk of meat for three days now & the leftovers are pretty much gone. The last quarter of the roast is now shredded and will be turned into soup... We threw the remaining beef/juice into a big pot & added a couple of potatoes, carrots, 2 quarts of tomatoes, a quart each of green beans, corn, peas & half a box of barley. We should be good for the rest of the week.

I got up at 3:30am Thanksgiving morning to light the fire and get the turkey ready to put on the smoker. Well long story short...... I overcooked it. I was only able to salvage the breast meat and it was actually very good, but I had to chunk the rest. I didnt take any pictures either because well, it was not picture worthy, LOL.

However, I redeemed myself Friday with the best 2 racks of ribs I have made to date. I tried some new instructions from a friend and have now found my favorite way to cook my ribs. Both racks were very quickly devoured.
